NotesSubject Note: The Liudzius family of New Britain, Connecticut have been bakers of the Lithuanian wedding and special occasion cake called “Ragoulis” for decades, starting with the family patriarch, Joseph Luidzius (1932-2017), and his wife Bette Ann. Their children and grandchildren continue the tradition, and produced a YouTube video (“Learn How To Make A Ragoulis With Becca and Joe”) that presents the making of this beloved Lithuanian confection. Called Ragoulis or Šakotis, meaning spiked or branched, and sometimes referred to as “tree cake,” it is made like a funnel cake on a rotating spit over a heat source, with the batter forming spikes or appendages like the branches of a tree. Often the Ragoulis is decorated with flowers when presented for a celebration.
